Overseas the school meal program to include menu development and food preparation in accordance with Federal, State and local standards, guidelines, and regulations.

Essential Functions
Works as a team lead along with the Chief and Purchasing Assistant to develop menus that meet MSDE and USDA guidelines.
Creates, plans, and implements breakfast, lunch, and snack menus which meet Federal regulatory standards, enables Food and Nutrition to meet its budget, and satisfy the tastes of students. Develop diverse menu specific selections for secondary and primary schools.
Creating specifications and estimating needs for contracted food supplies.
Conducts federally mandated nutrient analysis of all menus as planned, served and revised as needed.
Manages the effective use of USDA commodities to maximize the benefit to the school meals program.
Researches, evaluates, and recommends new food products, menus, and school meal program options.
Coordinates testing and evaluation of current menu items and possible new products with regard to specification compliance, quality standards, and student acceptance/satisfaction.
Writes and distributes periodic written communications to all cafeterias to facilitate food preparation, utilization, and service.
Visits schools for onsite evaluation of the operation to include menus food quality, meal preparation, and customer acceptance.
Works with Farm Manager to incorporate seasonal produce into menu cycles.
Capable of purchasing fresh and frozen products and maintaining quality inventory control.
Manages food service contracts and vendor performance, while requisitioning purchase orders and reconciling invoices for at least 15 vendors.
Coordinates application, implementation, and maintenance of the Fresh Fruit and Vegetable Program grant.
Creates and facilitates training for department staff, administrators, and teachers on various food service initiatives including but not limited to:
After School Supper Program
Fresh Fruit and Vegetable Program
Salad Bar Program
Maintains product information in online food ordering software, and facilitates the weekly order process for all cafeterias.
Participate in school wellness council activities as Food and Nutrition Department representative.
Consults with cafeteria managers on developing alternative menus for students with allergies and other dietary restrictions.
Acts as liaison between food distributor and individual schools by analyzing discrepancies and facilitating order dispute solutions.

Desired Qualifications
Bachelor's degree in Nutrition. Degree must be from an accredited college or institution.
Maryland registered Dietitian
Must possess a Maryland class C or equivalent out-of-state driver's license
Knowledge of federal and state regulations regarding food and nutrition
Demonstrated experience in training and staff development in food and nutrition serves or satisfactory equivalent of education and experience
Excellent verbal and written communication as well as interpersonal skills
Two to four years of Dietitian experience in schools or institutional nutrition preferred.
