Functions as Dietitian for Mary Queen & Mother Center.


Duties & Responsibilities


  • Plans and maintains registration and licensure certification requirements.

  • Plan, develop, organize, implement, evaluate, and direct the Dietary Department, its progress and activities.

  • Develop and maintain written dietary policies and procedures.

  • Interpret the department’s policies and procedures to employees, residents, visitors, government agencies, etc.

  • Assist the dietary staff in the development and use of departmental policies, procedures, equipment, supplies, etc.

  • Make written oral reports/ recommendations to the Administrator as necessary/ required concerning the operation of the Dietary Dept.

  • Assume the administrative authority, responsibility and accountability of directing the Dietary Dept.

  • Delegate a responsible staff member to act in your behalf when absent from the facility.

  • Write POC for Dietary Department DHS survey deficiencies, submit this to facility Administrator for review and approval and develop and implement plan(s) of action to correct dietary deficiencies.

  • Develop a Quality project that is useful for the Dietary Department that supports the goals and objectives of the facility.

  • Oversee discharge planning as needed and attend UR Meeting in absence of Assistant Dietitian and ensure all UR notes are written in timely manner.

  • Participate in facility surveys and inspections) made by authorized government agencies.

  • Interview residents or family members, as necessary, to obtain diet history.

  • Obtain resident’s food likes, dislikes and allergies and input data in 3 square program and update staff of any resident food allergies to ensure no resident has an allergic reaction to food.

  • Develop methods for determining quality and quantity of food served.

  • Ensure that charted dietary progress notes are informative and descripive of the service provided and off the resident’s response to service.

  • Ensure that menus are maintained and filed in accordance with established policies and procedures.

  • Visit residents periodically to evaluate the quality of meals served, likes and dislikes, etc.

  • Involve the residents in planning dietary objectives and goals for the resident.

  • Plan the menus as prescribed by the attending physician and complete all diet spreadsheets to ensure all special diet orders and textures have the correct items on their tray ticket, that productions sheets are accurate, and that all items on production sheets are prepared according to the standardized recipe.

  • Create new recipes in 3 square as well as create texture modification recipes for each new

  • recipe.

  • Ensure all recipes are correctly scaled to appropriate number of desired servings to meet facility needs.

  • Ensure that all cooks know how to measure and weight recipe ingredients correctly.

  • Answer cooks questions they have regarding cooking techniques and educate and improve their cooking skills

  • Assess resident nutrition needs of calories, protein and hydration needs for residents on nutrition support and ensure nursing understands orders as written and follow them accordingly.

  • Enter all nutrition support order in Matrix for nursing.

  • Enter orders for calorie counts and calculate calorie intake and enter data into Matrix and review information with MD’s and discuss and/or recommend nutrition support based on findings.

  • Write waivers of liability, present them to family and or resident as applicable, witness their signature and ensure that waiver is documented in the medical record and honored by Dietary Department.

  • Develops individualized care plans for LTC residents and ensure that all residents have a unique care plan written and followed.

  • Meet with administration, medical and nursing staff, as well as other related departments in planning food service programs and activities.

  • Ensure that residents have nourishing snacks available to them at bedtime and in between all meals.

  • Enter snacks into 3 square and ensure that ordered snacks are delivered on time and received by residents.

  • Meet with dietary personnel or a regular basis and solicit advice from Dietary Manager and leads concerning the operation of the Dietary Dept., assist in identifying and correcting problem areas, and/ or the improvement of services.

  • Attend department head meetings, etc., as scheduled or as may be called.

  • Assist in standardizing the methods in which dietary tasks will be performed.

  • Review and check competence of dietary personnel and make necessary adjustments/ corrections as required or that become necessary.

  • Maintain a productive working relationship with other department supervisors and coordinate dietary services to assure that daily dietary services can be performed without interruption.

  • Make daily rounds to assure that dietary personnel are performing required duties and to assure that appropriate dietary procedures are being rendered to meet the needs of the facility.

  • Assist in monitoring food service production to assure that meals are prepared on time and according to standardized recipes.

  • Assesses LTC resident are evaluated upon admission, 3 month, 6 month and annually and weekly as needed for “at risk” residents.

  • Monitors residents on an on-going basis.

  • Collects and analyzes weekly weight data and enters weights into Matrix. Adjusts and monitors care accordingly.

  • Monitors weekly wound report and ensure nutrition plan is in place for wound management.

  • Participates in MQMC Quality Assurance Performance Improvement Program.

  • Observes feeding and intakes of residents at mealtime. Adjusts and monitors care accordingly

  • Participates in Care Plan meetings, 5 star Quality and Interdisciplinary Team and all other appropriate scheduled meetings when required.

  • Monitors monthly weights for accuracy, enters weights into Matrix and assesses significant weight changes and documents in Matrix the cause of the significant weight change each month and develops nutrition plan as indicated to meet new nutrition goals for those residents.

  • Enters nutritional information in MDS and Matrix accurately and timely.

  • Meets with resident and family daily and as needed.

  • Meets with Department Head and Dietary Manager regularly.

  • Responsible for ensuring staff follows HR Policies and Procedures.

  • Performs other duties as assigned.
  • Others as deemed necessary and appropriate, or as may be directed by the Administrator.

  • Approve COUPA orders and all spending from Dietary Manager on a daily basis.

  • Write COUPA orders for tube feeding supplies on a weekly basis.

  • Make trips to Dierberg’s when needed to purchase special food items to meet resident needs and deems necessary to meet nutritional needs of residents.

  • Make trips to US Food Will Call pick up as needed to ensure adequate food is supplied for residents.

  • Listen to employee grievances and issuing counseling as indicated and/or meeting with union representative as needed with Dietary manager and employee as needed.

  • Oversee daily operations of dining services to ensure cleanliness, efficiency of meal delivery, resident customer service, employee morale, coaching and mentoring of Dietary Manager, Assistant Dietitian’s and staff.

  • Audit diet orders monthly.

  • Prepare annual budget and assist other department heads with their budgets when delegated to do so.

  • Prepare spreadsheets for annual inventory.

  • Review cost control and complete cost control projects as assigned by facility administrator.

  • Order new kitchen equipment and repairs as needed and when Dietary Manager is abscent/ on vacation.

  • Approve payroll, approve time off of professional staff.

  • Write monthly newsletter article.

  • On call for department 24/7.

  • Plan and help coordinate SAW dinner and annual Christmas party and Veteran’s Day party.

  • Reactivate 3 square maintenance contract quarterly.

  • Interviews, hires and trains all professional staff.

  • Meets with Speech Therapist to discuss resident care as needed.

  • Talks with MD’s and CNP or ANP as needed to review or discuss resident nutrition related care or concerns.



Knowledge and Experience Requirements


  • Must have a BS in nutrition.

  • Must be an RD, LD with 5 years of experience.






Pre-Employment Screening
